Yum! This is such a favorite of mine, especially as the weather is getting colder. It pairs so amazingly well with a sourdough bread which serves to wipe the plate clean from the amazing sauce. Enjoy! It’s an impressive meal to serve if you are hosting brunch. It is easy to scale for more portions. And the best part? It’s all done in 1 skillet.

Ingredients

  • 2 eggs (free range if possible)
  • 100 g canned tomatoes
  • 100 ml broth
  • 5 g tomato paste
  • 1/2 green bell pepper (chopped)
  • 1/2 shallot (chopped)
  • 1 garlic clove
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp ghee
  • 60 g whole wheat sourdough bread (about 1 thin slice) to serve

Directions

  1. Heat skillet over medium heat.
  2. Add chopped shallot and bell pepper and cook until softened.
  3. Then add the garlic, cumin, paprika, and salt. Stir well.
  4. Add canned tomatoes and broth, mix well, cover, and simmer for about 5 minutes.
  5. Remove the lid and make wells for the eggs, and then crack an egg into each well. Season with salt & pepper to your liking.
  6. Cover again, and cook for another 5 minutes (or until eggs are done).
  7. Serve with whole wheat sourdough bread.
