Ingredients

  • 3 medium potatoes (about 240 g)
  • 100 g smoked Salmon
  • 1/4 avocado (about 40 g)
  • 40g 0% fat Greek yogurt
  • 1 tsp ghee (6 ml)
  • Salt & pepper to taste
  • Fresh chives (optional)
  • Lemon wedge for serving

Directions

  1. Preheat your pan over medium heat with the tsp of ghee.
  2. Grate the potatoes (with the skin on- it’s full of nutrients).
  3. Squeeze as much water out of the potatoes as you can and then season with salt & pepper.
  4. Spread the potatoes evenly across the pan and fry about 5 minutes on each side, or until golden brown.
  5. While the potatoes cook, mash the avocado and combine it with the Greek yogurt.
  6. Assemble: Once your potato pancake is cooked, move it to a plate and top with the avocado mixture and salmon.
  7. Garnish and Serve: Garnish with chopped chives and a squirt of lemon. Serve immediately and enjoy!
