If you love Sushi, but can’t be bothered with the prep, this recipe is for you. You simply prepare your rice, let it cool, and then assemble everything together. That’s it. It’s delicious, and packs 33g of protein for 515 kcal. You can get creative with the vegetables too. It’s really worth using wild caught salmon, because it has much better nutritional qualities.

Ingredients

  • 100 g wild caught smoked salmon
  • 75 g sushi rice
  • 1/2 tsp brown sugar
  • 1/4 tsp salt
  • 1 tbsp sushi or rice vinegar
  • 22 g smashed avocado (about 1/4 of the fruit, depending on the size)
  • 40 g 5% fat Greek yogurt
  • 15 g light cream cheese
  • 3 g nori chips (4 chips)
  • 1/4 of a cucumber, sliced
  • Soy sauce for serving (optional)

Directions

  1. Cook your rice either in a rice cooker or according to package instructions.
  2. While the rice is cooking, prepare the rice dressing by combining the vinegar, sugar, and salt. Mix until the sugar and salt dissolve.
  3. Once the rice finishes cooking, let it rest for 10 minutes. Then transfer it to a bowl and while it is still hot, add in the rice dressing. Mix until just blended. Don’t over mix to prevent the rice from getting too mushy. Allow to cool completely.
  4. While rice is cooling, combine the Greek yogurt, cream cheese and avocado.
  5. Now that we have all the components, let’s assemble.
  6. Start by spreading the rice across the bottom of your lunch box. (I use these- amazon affiliate link)
  7. Now spread the Greek yogurt sauce across. Then add the nori chips, cucumber slices, and top with salmon.
  8. Slice into squares and Enjoy!

Notes

*You can store this in the fridge for up to 2 days, although it’s, of course, more fresh within a day of making.
*If you use farmed salmon, the meal will have higher fat content.
