Ingredients
- 3 medium potatoes (about 240 g)
- 100 g smoked Salmon
- 1/4 avocado (about 40 g)
- 40g 0% fat Greek yogurt
- 1 tsp ghee (6 ml)
- Salt & pepper to taste
- Fresh chives (optional)
- Lemon wedge for serving
Directions
- Preheat your pan over medium heat with the tsp of ghee.
- Grate the potatoes (with the skin on- it’s full of nutrients).
- Squeeze as much water out of the potatoes as you can and then season with salt & pepper.
- Spread the potatoes evenly across the pan and fry about 5 minutes on each side, or until golden brown.
- While the potatoes cook, mash the avocado and combine it with the Greek yogurt.
- Assemble: Once your potato pancake is cooked, move it to a plate and top with the avocado mixture and salmon.
- Garnish and Serve: Garnish with chopped chives and a squirt of lemon. Serve immediately and enjoy!
